Thai Street Food Words: How to Read a Cart Menu
Rice is ข้าว (khâao), stir-fried is ผัด (phàt), chicken is ไก่ (gài). Seven Thai words that decode most street-food menus and most of what's shouted at the wok.

Seven words decode most of a street-food menu: ข้าว khâao rice, ผัด phàt stir-fried, ก๋วยเตี๋ยว gǔay-dtǐao noodle soup, ไก่ gài chicken, หมู mǔu pork, กุ้ง gûng shrimp, ไข่ khài egg.
Almost every dish name on a Thai cart is these pieces stacked together — a cooking method, a base, and a protein.
Thai dish names are Lego, not vocabulary
Once you hear it, you can't unhear it. A dish name tells you how it was cooked, what it's on, and what's in it, in roughly that order. phàt tells you it came out of a wok. khâao tells you it's on rice. gài tells you it's chicken.
That means you are not memorizing hundreds of dish names. You're learning seven pieces and recognizing them inside longer words. When you catch gài at the end of something you've never heard, you already know the important part.
khâao means rice, and it also means food
This is a nice piece of the language to know early. Rice is so central that the word for it does duty for the meal itself — an invitation built around khâao is an invitation to eat, whatever is actually being served. It tells you something true about the culture in one syllable.
The four proteins to have ready
gài chicken, mǔu pork, gûng shrimp, khài egg. Those four cover the overwhelming majority of what a cart sells, and they're the words you'll be asked to choose between — often as a single questioning word from the cook, with an eyebrow.
khài is worth extra attention. An egg cracked on top is the standard upgrade to almost any rice plate, and it usually costs an extra ten baht or so.
Do I need to say the whole dish name?
No. Pointing plus one protein word is a complete order. an-níi for the dish, gài for the protein, done. The cook is not testing your Thai — they're trying to feed you quickly and get to the next person.
What about gǔay-dtǐao?
Noodle soup, and it's a whole world of its own: you'll be asked to choose the noodle, the protein and the broth, usually faster than you can process. Point at what the person before you got. Nobody minds, and it's how everyone learns.
